☆ Food:
● Taiye Chicken (Taiye Ji)
Taiye chicken is named after an ancient county mayor. In the late Qing Dynasty, a local mayor invented this dish after his retirement. The cooking method is quite simple. Once boiled, the chicken is then smoked with fried black tea leaves and honey. After it cools, it is sliced and cut into bite size pieces, and added to a special salty soup with honey and MSG.
● Bai Yun Sweet and Sour Pork Kidneys (baiyunzhushou)
To make this classic sweet and sour Guangzhou dish, por
k kidneys are cut into pieces and boiled thoroughly. Once cooked, they are submerged in Baiyun Spring Water and soaked for at least a day to remove all the impurities. The next day, they are boiled with some sugar, white vinegar and salt. After boiling, they must cool for several hours before being served. Crispy-skinned and delicious, you will never get tired of Baiyun Sweet and Sour Pork Kidneys!
● Sweet Baked Pork with Honey Juice (Mizhichashao)
One of the most traditional local dishes, loved for its sweet, crispy flavor. First pork is chopped into small pieces, and then is placed in an earthenware pot. After being marinated for 45 minutes, the meat is strung together and baked in an oven where it is marinated at intervals while being cooked to perfection.
● Roast Goose (Shao'e)
Roast Goose is one of Guangzhou's most famous dishes. Ideally, this dish is made with a black or brown goose from Qingyuan. Once cleaned, the goose is coated with five-spice powder. Hot water is then poured over it and immediately afterwards it is submerged in cold water. The goose is then coated with sugar and salt and roasted over an open fire. The most famous places to try the dish are Yuji Roast Goose Restaurant, and Shenjing Roast Goose of Changzhou Island, Huangpu District.
